2-Day Workshop | July 14th & 15th
Join Heritage Inspirations and Anita Rodriguez in the kitchen to learn quintessential northern New Mexican staples and honor our state question: Red, Green Or Christmas? Discover how these recipes are infused with flavors that invigorate the soul and inspire your creativity cooking!
Our menu across this two day workshop cultivating and sharing the recipes of our Mothers, Grandmothers and Great Grandmothers will include Tortillas de harina, Chicos de horno, Frijoles de fogon, Tamales, Calabacitas, Guacamole, Pico de Gallo, Homemade Chips and Enchiladas.
We will enjoy a special flamenco dance performance by Catalina Fernandez with live flamenco guitar by the firelight on the portal following dinner.
Friday July 14
10:00 am visit Taos Pueblo UNESCO World Heritage Site and learn first hand about traditional cooking in ornos ovens
2:00 pm Orientation, introductions, house tour, refreshments– build fires in horno and fogon, let coals build up.
Navigate the kitchen through stations. Tamale preparation and instruction.
Make Calabacitas, tortillas and enchiladas.
5:30 Dinner served on portal.
Flamenco dance and guitar evening entertainment by Catalina Fernandez.
Saturday July 15
10:00 am Meet at El Monte Sagrado Resort and journey to Anita’s home.
Enjoy coffee, tea and pastries.
Unload chicos from horno, unpack frijoles from fogon, and with the leftovers from above and a fruit salad serve brunch buffet style on portal.
11:00 am Brunch is served under the covered portal
Enjoy making your way through each of the stations experiencing assembling tamales, pasting the masa on helotes, adding the filling, folding and seal with a tie
Together we braid the chicos and celebrate our cooking.
